Plantain and Red Cabbage Salad
Those who know me will know that I love all thing plantains. So when I had a spare bag that needed to be used quickly, I had to be creative. And I must admit that I surprised myself (and @berniekaussler ) with this super flavorsome salad. The soft and sweetness of the plantains combined with the crunchy cabbage and the tanginess of lime is just perfect!
I wish I was better at taking measurements but I just don’t cook that way. Here are the ingredients and steps I used:
Peel, slice and roast 4 ripe plantains in coconut oil on 350° for 20 mins.
Once cooled, put them to a big bowl and add shredded red cabbage, sliced red onion, and sliced radishes and cucumbers.
For the dressing, mix 4 tablespoons of lime juice, 3 tablespoons of olive oil, 3 tablespoons of apple cider vinegar, salt, and pepper and pour over the salad. Top up with half a large bunch of parsley.
Mix and serve!
